MARMALADE FRUIT LOAF

Ingredients:

10 oz plain flour,

2 oz corn flour,

1 oz butter or margarine,

6 oz caster sugar,

half pound of dates,

2 oz chopped walnuts,

1 level teaspoon salt,

 1 egg,

2 level teaspoons of sodium bicarbonate and half pint of boiling water:

TOPPING:

4 oz chopped walnuts

 2 oz sultanas and

 4 tablespoons of orange marmalade.

Method:   Grease and line a 9" x 6" tin with grease proof paper. Sift flour and corn flour together, rub in the butter or margarine lightly. Stir in the sugar, chopped dates, walnuts, salt and beaten egg, followed by stirring in the sodium bicarbonate dissolved in the boiling water. Mix everything well together and then transfer into the prepared tin and leave for 10 minutes and then bake in moderate oven at 375 deg.F (191 deg C) or gas 4 for three quarters of an hour. Turn out on wire rack to cool. TOPPING: mix the walnuts and fruit together and then decorate the top of the loaf with this mixture on top of a layer of marmalade.
