
MUM’s SPECIAL DATE LOAF
Ingredients
8 oz Self raising flour
8 oz Dates
4 oz margarine or butter
5 oz brown sugar
3 oz walnuts
2 large eggs
2 teaspoons of baking powder and bicarbonate of soda if plain flour is used
instead of self raising flour.
1 teaspoon of mixed spice
1 teaspoon of ginger
Method
Chop the dates and transfer to a saucepan and bring to the boil with 1/4
pint of water. Allow to cool
Beat together the butter or margarine and the brown sugar and eggs
Mix the flour, spice, ginger and walnuts together and then add the dates
including the water,
Finally mix all the ingredients together and transfer to an 8 inch baking tin
and bake for 1 hour at 170 degrees C.
