
BANANA NUT BREAD
Ingredients & method
Mix in a bowl - 3 ripe well mashed
banana, 2 eggs which have been lightly beaten.
Sift Together – 9 oz of plain flour, 5 1/2 oz of granulated sugar, 1 teaspoon
of salt, 1 teaspoon of bicarbonate of soda and then
Add this mixture to the banana-egg mixture and combine.
To this add 4 oz of chopped nuts (It doesn’t say which but the choice is yours
– almonds, walnuts, for example come to mind or perhaps a mixture of whatever
takes your fancy.)
Stir well and then put in a buttered loaf tin approx 9 inches x 5 inches and
bake for 1 hour at 350 degrees F.
