
APRICOT BUNS
Ingredients:
6 oz self raising flour,
2 oz semolina,
6 oz butter or margarine,
3 oz caster sugar,
1 tablespoon of finely grated orange rind,
2 eggs,
3 level tablespoons of apricot jam and
2 oz chopped blanche almonds.
Method: Sift flour and semolina together. Cream butter (or margarine) sugar and orange rind until light. Beat in the eggs one at time. Stir in the jam, chopped almonds and the sifted flour mixture. Transfer the mixture evenly into 18 greased patty tins and bake in a moderate oven at 390 deg. F ( 199 deg C) or gas mark 5 for 20 minutes. Turn out the buns to cool on a wire rack. Top with a little apricot jam to be completely decadent!
