APRICOT LOAF


This one came to mum many years ago from my late Aunt Ethel
Soak 4 oz of dried apricots in boiling water for 1 hour (An alternative available now and not then is that the moist semi dried apricots can be used and these would not need to be soaked but for a short time in the boiling water or even not at all)
Cut the apricots onto small pieces and stir into 8 oz of sieved self raising flour. Then add 2 oz of chopped almonds, 2 oz of soft brown sugar . Melt 2 oz of margarine or butter and add 4 oz of Golden syrup together in a saucepan. Add 1 beaten egg and 5 tablespoons of milk. Add this mixture to the dry ingredients and mix well. Pour into a greased and lined 2 lb loaf tin and then bake in an oven at 350 deg. F  or gas mark 4 for 1 1/4 hours.
